Roasted shishito peppers

Shishito Peppers

While it's unlikely you'll be able to locate these green little guys at your neighbourhood grocery store, you should be able to track them down at Asian specialty markets in your city. Once you roast the peppers and pop one into your mouth, you'll realize why they're worth seeking out — over and over and over...

These peppers are great with the Korean red pepper and lapsang spice mix, but they will work with other smoky and bold spices, too.

Roasted Shishito Peppers

4 cups shishito peppers
2 tbsp canola oil
1 1/2 tbsp Korean red pepper and lapsang spice rub

Preheat your oven to 400 F.

In a medium bowl, toss peppers together with oil until well coated.

Place on baking sheet and roast for 15 minutes, turning the peppers over once halfway through cooking.

Turn oven to broil and let peppers cook until they begin to brown, about 5 minutes.

Remove from oven, place back into bowl and toss with spice mix.

Serve warm (and try to have just one*).
