When you can't take a vacation to Brazil, make a Caipirinha that transports you to the vibrant city of Rio de Janeiro.

From July 14 to August 6, more than 45 restaurants in Vancouver will be participating in the Pride Cocktail Crawl, a fundraiser for Dr. Peter AIDS Foundation. Among the restaurants is Café Medina, where bartender Thiago Alves will be offering this Caipirinha-style cocktail with rosewater, mint and chile.

1/2 oz. cachaça
1/2 oz. Cointreau
3/4 oz. fresh lime juice
3 drops rosewater
1 egg white
1 bird's eye chile
4 fresh mint leaves
4 to 5 rose petals, for garnish
1/4 tsp lime zest, for garnish

Add all liquids and the egg white to a cocktail shaker and dry shake.

Add chili, mint and ice to shaker and shake hard.

Double strain the mixture into a chilled coupe glass.

Garnish with lime on top and delicately placed rose petals.
