Caramelized onion and blue cheese dip

Continuing with our Sochi-related recipes, Canadian Women's Ski Jumping team member, Alexandra Pretorius, gives us a sweet-savoury dip that is perfect to sink a chip, cracker or crisp into while cheering on Canada during the Winter Olympics.

Caramelized Onion and Blue Cheese Dip

1 tbsp extra virgin olive oil
1 yellow onion, diced
3/4 cup sour cream
1/4 cup mayonnaise
3 ounces blue cheese
6 ounces cream cheese, at room temperature
4 tsp lemon juice
salt and pepper, to taste

In a small sauté pan over medium-low, heat up olive oil. Add onion, cover and cook until deep golden brown, stirring occasionally, about 20 mins. Let cool for 10 minutes.

In a medium bowl, whisk together mayonnaise and sour cream, then add the blue cheese and cream cheese. Mash mixture with a rubber spatula until smooth, then stir in the caramelized onion.

Season to taste with salt and pepper.

Refrigerate until ready to serve. Serve with Raincoast Cranberry Hazelnut Crisps or wheat-free Raincoast Rosemary Oat Crisps.
