You may not be in Ireland for St. Patrick's Day, but you can celebrate in style using local Alberta ingredients. Eau Claire Distillery, Alberta's first craft distillery, has teamed up with Cannibale barbershop and cocktail bar to introduce the Fiddler's Green, a special cocktail made with Parlour Gin and Spring Equinox from the Turner Valley-

Cannibale bartender Dylan Macleod created the approachable green cocktail with Parlour Gin, Spring Equinox, Absinth, cucumber, mint and lime juice. The cucumber works perfectly with the gin, while the contrasting flavours of Spring Equinox and Absinth adds complexity.

Fiddler's Green cocktail

1 oz. Eau Claire Distillery Parlour Gin
1 oz. Eau Claire Distillery Spring Equinox
1/8 absinthe
3/4 oz. mint syrup
3/4 oz. lime juice
5 slices cucumber
club soda, as needed
mint, to garnish
extra cucumber slices, to garnish

In a shaker filled with ice, add gin, Spring Equinox, absinthe, mint syrup and lime juice. Shake. In a collins glass 3/4 filled with ice, add cucumber slices. Double strain and pour drink into collins glass and top with soda.

Garnish with spring of mint and cucumber slice.
