Barbecue season is now in full swing and you're going to need a handful of go-to recipes for meats and salads. For meat, Urban Butcher can help. It's come up with this Asian-style BBQ marinade that is easy to whip up. The newest Calgary butcher shop, with locations in Mission and Willow Park, features local and ethically raised meats and organic poultry.

Marinade

1/4 cup orange juice concentrate
2 cups rice wine vinegar
2 cups honey
1/4 cup sesame oil
1 tbsp chopped fresh ginger
1/2 cup chopped green onions
1/2 cup diced red onion
1/2 cup soy sauce
2 tbsp chopped garlic
1 tbsp chopped fresh basil
1 tbsp chopped fresh oregano
1 tbsp ground black pepper
1 Orange, cut into thick slices

In a large bowl, combine all ingredients together.

 

Assembly

1 recipe rib marinade, above
5 lbs baby back pork ribs

Reserve about one cup of marinade for basting. Massage the rest of the marinade into ribs. Marinate for 2 days in refrigerator, turning occasionally.

When ready to cook, light barbecue and turn the head to low. Cook ribs, occasionally brushing with reserved marinade until ribs are cooked. Approximately 5 to 6 hours.
