Spiced Greek chicken tenders and orzo pilaf
Bring a medium pot of salted water to a boil. Start the recipe when the water is boiling.
Wash and dry cucumber. Directly into a medium bowl, using a box grater, coarsely grate cucumber. Zest and juice lemon.
Start Orzo Pilaf
To the boiling water, add orzo. Cook, stirring occasionally, for 7-9 min, until tender but still firm to the bite. Strain and return orzo to the same pot, off heat. Stir in 2 tbsp butter. Set aside.
Meanwhile, in a large non-stick pan, heat 2 tbsp oil over medium-high. While the pan heats, line a plate with paper towel and pat chicken dry. Sprinkle over Greek seasoning. Season with salt and pepper. Toss to coat. When the pan is hot, add chicken. Sear, for 2-3 min per side, until cooked through. Transfer chicken to a plate and set aside. To the bowl with grated cucumber, add yogurt and half the roasted garlic puree. Season with salt and pepper. Stir together.
Finish Orzo Pilaf
In the same pan, heat 2 tsp oil over medium high. When the pan is hot, add onions and tomatoes. Cook, stirring constantly, for 2-3 min until onions soften. Season with saltand pepper. Add orzo, spinach and remaining roasted garlic puree. Cook, stirring often, for 1 min, until spinach is wilted. Off heat, stir in 1/2 tsp lemon zest and 2 tbsp lemon juice. Season with salt and pepper. Plate chicken with orzo. Dollop tzatziki and crumble feta over top.
