Cucumber and fresh herb salad

Use cucumbers and a mix of fresh herbs to make a summer salad everyone will fall in love with.

Now that it's mid-summer, there is no reason for you not to be eating fresh Canadian-grown vegetables every day.

This bright cucumber salad recipe shows you just how versatile the crisp vegetable can be. The dressing itself works for any summer salad, so feel free to make an extra batch of that and use it all week long!

Cucumber and pepperoncini dressing

1/2 long english cucumber, roughly chopped
6 pepperoncini, tops and seeds removed
1 clove garlic
1/4 cup roughly chopped fresh mint
1/4 cup roughly chopped fresh basil
1/4 cup roughly chopped fresh parsley
1 tbsp pickling liquid from pepperoncini
1 tsp apple cider vinegar
1/4 cup canola oil
salt, to taste

Place first 8 ingredients in a blender and blend on high until very smooth.

Continue to pulse blender and slowly add oil until mixture emulsifies.

Season to taste with salt and place in refrigerator until ready to use.

Salad

2 long English cucumbers, cut as desired
4 baby cucumbers, 1/4" sliced
1/2 cup roughly chopped fresh mint
1/2 cup roughly chopped fresh parsley
1/2 cup roughly chopped fresh basil
salt, to taste

Place salad components in a large mixing bowl, add desired amount of dressing and toss to combine.

Note: cut the cucumber in a variety of ways so your salad offers a mix of textures. For example, use a vegetable peelers for long strips of cucumber.
