This bright cucumber salad recipe shows you just how versatile the crisp vegetable can be. The dressing itself works for any summer salad, so feel free to make an extra batch of that and use it all week long!
Cucumber and pepperoncini dressing
Place first 8 ingredients in a blender and blend on high until very smooth.
Continue to pulse blender and slowly add oil until mixture emulsifies.
Season to taste with salt and place in refrigerator until ready to use.
Place salad components in a large mixing bowl, add desired amount of dressing and toss to combine.
Note: cut the cucumber in a variety of ways so your salad offers a mix of textures. For example, use a vegetable peelers for long strips of cucumber.
