Calgary’s Hawthorn Dining Room and Bar announces new chefs and menu

The Fairmont Palliser eatery’s new summer menus launch this week

A new culinary team has taken up the helm of Calgary’s Hawthorn Dining Room and Bar and this week, the Fairmont Palliser eatery announced a new summer menu inspired by the province’s seasonal bounty. 

Hawthorn’s new dinner menu was designed by its newest additions, executive chef Gregor Dunki and chef Daniel Mracka. The duo’s debut menu reaffirms the restaurant’s commitment to locality with an array of ingredient-forward dishes that range from hyper-local starters like Alberta Beef Tartare to globally-inspired dishes such as Za’atar Summer Squash with zucchini, acorn squash, faro, tahini, and vine tomato.

“The new Hawthorn dinner menu is like a love letter to our province” says chef Dunki. “As both chef Mracka and I are relatively new to Alberta we wanted our first menu at Hawthorn to be a representation of what travelers rave about when they indulge in the cuisine when they visit Alberta.”

The new dinner menu also features a slew of shareable options, including a 10-ounce Bison striploin and a 14-ounce rack of lamb, along with rotational interpretations of its popular Mille Crepe Cake, which kicks off with a Pineapple Upside Down Crepe Cake (pictured above).

Hawthorn Dining Room and Bar is open daily from 6:30 a.m. to 10 p.m. Reservations can be made online.
