Enjoy Czech-style eats and drinks at The Prairie Emporium in March

After a successful sold-out pop-up last month, the Czech-inspired PRASÁTKO pop-up will once again take place at Calgary's The Prairie Emporium.

Happening on Thursday, March 14 and Friday, March 15 from 5 p.m. to 11 p.m., the pop-up will be serving an array of Czech-inspired dishes created by putting subtle twists on classic Czech recipes, accented by Prairie ingredients.

Dishes like buttered green lentils with caramelized onions and braised pork, an Alberta beef goulash toasted hoagie, pickled Camembert, and apple cinnamon bread pudding are just a few tasty examples of what's on the menu.

When it comes to drinks, you can't have a Czech-style event without beers by Pilsner Urquell and Kozel (two of the country's most famous brewers), as well as spirits like Becherovka, Fernet Stock, and Slivovitz. PRASÁTKO was brought to life by best-selling cookbook author and food writer Dan Clapson. Clapson has spent two months a year working remotely from Prague since 2017 and this pop-up is his homage to the European country he calls his second home.

"I have always found myself craving Czech and Slovak food when I return to Canada," says Clapson. "Working with my friends abroad and now, chatting with Czech expats here in Calgary, I am excited to serve this new extended menu of Czech-inspired food and drink to Calgarians in March!"

Seating is available on first-come-first-serve basis, but groups of 4 or more have the option purchase reserved seats via Showpass to guarantee a table during a two-hour dining window.
