Cocktail lovers know what an exciting scene Vancouver has and among the list of restaurants crafting exception drinks is the Cascade Room. General Manager Justin Taylor combines the herbaceous flavours of green Chartreuse and chamomile with the aromatic spicy notes of the Bittered Sling bitters and the crispness from B.C.'s Gillespie's Sin Gin in this cocktail. 

1 pinch Vancouver Island sea salt, plus more for garnish
1.5 oz. Gillespie’s Sin Gin
0.5 oz. green Chartreuse
0.5 oz. chamomile infused honey
0.75 oz. lime juice
3 dashes Bittered Sling Lem-Marrakec
1 lime twist, to garnish
1 spritz Taboo absinthe, to garnish

Rim half coupe glass with sea salt.

Combine all ingredients including pinch of sea salt, except lime twist and absinthe, to a cocktail shaker. 

Add ice and shake for 15 seconds. 

Double strain to prepared glass.

Garnish with lime twist and Taboo absinthe mist.

Chamomile honey

1 cup honey
1 cup water
2 chamomile tea bags

Bring all ingredients to a boil in a small sauce pan over high heat.

Reduce heat to low and let simmer for 5 minutes. Remove from heat, cool, and pour liquid into bottle.

Date bottle and keep sealed in the refrigerator for later use.
