Fairmont Hotels' Chai Tai cocktail

This spin on a classic Mai Tai calls for gin, chai-spiced simple syrup and Angostura bitters to add depth

Just because it's cold outside now, doesn't mean that you can't enjoy a tropical drink and manifest some sunny beach vibes. This spin on a Mai Tai debuted earlier this year as one of the cocktails in Fairmont Hotels' interesting new global cocktail program, Classics Perfected, and uses an interesting combination of rum and gin plus a chai-infused simple syrup to take things up a notch.

This global cocktail program was created by the Fairmont Tastemakers, a group of six elite bartenders from around the globe that includes two Canadians: Grant Sceney of Vancouver's Fairmont Pacific Rim and Nader Chabaane of Fairmonth The Queen Elizabeth in Montreal. So, feel free to pop by their respective bars to sip this cocktail with them.

Chai Tai cocktail

1 ounce Mount Gay Black Barrel rum
1 ounce The Botanist gin
3/4 ounce chai simple syrup
1 ounce fresh pineapple juice
1 ounce fresh lime juice
4 dashes Angostura Bitters
pineapple leaves, for garnish, optional

Place all ingredients in a cocktail shaker. Fill with ice and shake for 20 seconds.

Strain into Collins glass, top with ice and garnish with leaves if desired.
