There are plenty of Canadian cities where you can find a JOEY Restaurant, but not all of their restaurants are created equal. In particular, the group's flagship location in downtown Vancouver, JOEY Bentall, is where all of the testing happens for new menu items, composed dishes and liquid treats alike. Jesse Sahlin is the head of the beverage development when it comes to the chain and he spends a lot of his time behind the bar at Bentall playing around with all kinds of liquor, tonics, syrups and more. It's not too often that they let people get a hands-on experience in testing out new cocktails behind their "research" bar, but we're on their nice list, so they're going to let two lucky people do just that.
