Just because JOEY Restaurants got its start in Canada, that doesn't mean everything on the menu originates in the Great White North. Karen Johnston, regional manager of JOEY Restaurants for Seattle, created this cocktail in Seattle for the 2016 JALA House Party Throwdown and it's an homage to the women in our business who play a leading part in driving JOEY into the future. The cocktail was so delicious that it ended up on the menu permanently.
Rosemary is considered a symbol of women with strong will. Peach, elderflower, and bubbles all add a vibrancy to the drink.
Chill martini coupe.
Muddle 1 sprig of rosemary in a shaker. Add vodka, grapefruit juice, elderflower cordial and egg whites. Add ice and shake.
Double strain into prepared coupe. Add sparkling wine.
Garnish with remaining rosemary sprig and grapefruit peel.
