What's more local than gin made from herbs and botanicals from your own rooftop garden? That's exactly what the Fairmont Royal York has done in partnership with Dillon's Small Batch Distillers, taking full advantage of the rooftop’s pineapple sage, nasturtium, and lemon verbena at the hotel. Naturally, the Library Bar developed a cocktail recipe using the new product to celebrate.
At the Fairmont Royal York, the bartenders use its on rooftop honey in this recipe for ultimate freshness and flavour.
1 1/2 oz. 14th In Line Gin by Dillons
1/2 oz. green Chartreuse
3/4 oz. lime juice
1/2 oz. honey
1/2 oz. lemongrass syrup
2 oz. soda water
1 stalk lemongrass, for garnish
Combine all ingredients in a mixing glass and shake. Fill Collins glass with ice cubes and strain into glass. Garnish with lemongrass stalk.
