This cocktail recipe from Vancouver’s Nuba takes the classic Cuban-style mojito and doubles down on both with the addition of watermelon for a refreshingly delicious result.
Muddle mint leaves with watermelon syrup and lime juice in cocktail shaker.
Add rum and ice and shake for at least 10 seconds. Strain and pour into a collins glass over fresh ice and top with a splash of soda water.
Garnish with a fresh sprig of mint.
