Mocha Cabana’s Canadian Fog tea latte

A maple twist on the London Fog

Tea latte recipe

On a recent trip to Lethbridge, we popped into one of the city’s best restaurants, Mocha Cabana, for a late Sunday brunch. After one sip of their Canadian Fog tea latte, we were hooked on the spicy maple concoction, and had to ask for the recipe. If you can’t find a bottle of the maple spice syrup, you can use our homemade version that can be made on your stovetop in a few minutes.

Homemade Maple Spice Syrup

1 cup water
1 cup sugar
3 tbsp maple syrup
2 tsp ground cinnamon
2 tsp ground ginger
1 tsp ground cloves

In a saucepan over high heat, bring water and sugar to a boil. Add maple syrup, cinnamon, ginger and cloves. Bring back to a boil for a few minutes, about 3 mins. Remove from heat. Store unused syrup in the fridge.

Canadian fog tea latte

1 1/4 cup whole milk (3.5%)
1/2 oz. Monin Maple spice syrup, or 1 oz. of our recipe above
1 orange pekoe tea bag

In a small pot over high heat, boil half cup of water, turn off heat and add orange pekoe tea bag.

In a medium pot, steam or warm milk over medium heat. 

Add maple spice syrup to tea.

Pour steamed or warmed milk on top.  Enjoy!
