You may remember Ms. Jillian Harris from season five of the The Bachelorette, where she quickly became a fan favourite. With 15 years of experience in the design industry, a do-it-yourself attitude (in heels, of course) and a quirky personality, Harris was a seamless match for hosting Canada’s Handyman Challenge and Extreme Makeover: Home Edition. She's also hosted the popular show Love It or List It Vancouver on the W Network as well as other work within in the home design world. But, her skills aren't only in home design. She dabbles in the kitchen and here's her recipe for apple and gruyere tarts.
Her first cookbook Fraiche Food, Full Hearts was recently released and has been flying off shelves. This apple tart recipe won't be found in the pages of her book, but you will find it right here! Enjoy it!
Apple gruyere pastries
Preheat your oven to 350°F.
Roll out the puff pastry as directed on the package.
Use a 4-inch round cookie cutter or other large ring to cut out as many rounds as you can get. Place rounds on parchment-lined baking sheet and put in the freezer for about 30 minutes to firm up.
In a small saucepan over low heat, begin melting butter, then add vinegar, honey, thyme and salt. Stir gently until it bubbles and remove from heat. Set aside.
Remove the chilled pastry from the freezer. Use an offset spatula to place a few slices of gruyere on each round, and top with a stack of apple slices.
Bake until pastry starts to rise. Remove from oven and brush the honey butter mixture over the apples and sparingly on pastry edge.
Return to oven and continue to bake until the apples are soft and the pastry is golden and puffed, around 30 minutes.
Serve warm from the oven, garnished with shaved Grana Padano, thyme sprigs and a pinch of salt.
