Sloppy Joes don't have to be made with beef. For Alberta's pork month, try making it using ground pork, like in this recipe from Calgary's Oak Tree Tavern. You'll want to make a batch of these quick pickles to go with the meaty sandwich.
Sloppy Joe
1 tbsp canola oil
1 kg ground pork
salt, to taste
1/2 yellow onion, diced
1 clove garlic, minced
1 green pepper, diced
1/2 tsp oregano
1 tbsp chili powder
6 dashes Tabasco
1 400 ml can crushed tomatoes
1/4 cup water
In a heavy bottom pan over high heat, heat canola oil until almost smoking. Start browning off ground pork. Season with salt. When the pork is half done, add in onions and garlic.
When met is fully browned and onions are translucent, add in everything else. Turn heat to low and cook for 1 hour.
Bread and butter pickles
1/2 cup apple cider vinegar
2 tbsp sugar
1/2 tsp cumin
1/2 tsp salt
1/2 cucumber, thinly sliced on a mandolin
Add everything to a large pot over high heat and bring mixture to a boil. In a separate bowl, add cucumber slices and pour boiled liquid over cucumber. Let stand 1 hour.
Eat on a freshly toasted bun.
