Mornings are better when you have French toast ready to go. In this recipe, Fable Kitchen's chef Trevor Bird shows you how easy it is to get the toast and egg mixture ready the night before for an easy morning.
2 eggs
1 cup 10% (half-and-half) cream
1 cup 35% whipping cream
1 tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla extract
2 tbsp brown sugar
4 thick slices brioche
1/3 cup honey
100 g butter
1 pinch salt
Mix eggs, cream, spices, vanilla and brown sugar in a large bowl until well incorporated. Ladle mixture over brioche into 2-inch trays. Let sit over night.
When ready to serve, preheat oven to 350F.
Caramelize honey in a large pan over high heat, add in butter and let foam.
Add in French toast and place the pan in th oven. Flip after 10 minutes, and season with salt and repeat till center is 185F or higher. Let cool on a rack, then serve.
Do not stack to maintain crispy exterior.
