When you don't know what dessert to make or bring to a dinner party, classics are always welcomed, especially for special occasions. 

At Vancouver's Railtown Cafe, chef Mario Pelletier’s will be offering this classic pecan pie by the slice at Railtown Cafe’s four locations throughout the holiday season. You can also order a whole pie from Railtown Catering’s gourmet Holiday Turkey To-Go packages.

Sable base

3 1/3 cups all-purpose flour
1/2 ground almonds
1 3/4 cup icing sugar
1 cup butter
1 tsp salt
2 eggs

Preheat oven to 340°F.

In a large bowl, combine all dry ingredients. Rub in butter until mixture resembles crumbs.  

Slowly add eggs and combine until smooth.

Line the base mixture in two 10-inch circle tart tins. Blind bake (using beans on top of the crust) for approximately 20 to 25 minutes, or until the crust is half cooked.

Pecan filling

9 eggs
2 1/2 cups demerara sugar
1 3/4 cup golden syrup
1/2 cup butter, melted
1 pinch salt
9 cups pecans

Preheat oven to 350°F.

In a large bowl, add eggs, sugar and syrup, and mix until well combined. 

Incorporate the butter, salt and then the pecans.

Divide the pecan filling between the two pie crusts and bake for approximately 30 minutes.

Remove pies from oven and allow to cool before serving.
