Liam spends most of his free time scrambling pointy things, survival skiing, and setting off the fire alarm as he bakes with his 23-year-old sourdough starter named Petunia. He loves traveling to cold and miserable places, as long as he has a steaming mug of tea and good grub to fry in bacon fat. Liam is currently trying to cook a meal from every country in the world, the last one being Djibouti. The mere memory of bread dumplings with hanger steak served with heavy heavy cream sauce from the Czech Republic still makes him drool, but the scrambled egg papaya soup from Aruba leaves him unsettled and running for the bathroom. He also discovered that Aruba isn't a country - ops! Liam currently works for a Postmedia newspaper in Alberta.

Whether it’s croissants in Paris, fish and chips in London, or pizza in Naples, some cities are associated with iconic dishes. In Ottawa it’s shawarma. Apparently, it’s the thing to do in the capital.
