Czechia
Hey everyone,
Eat North co-founder and cookbook author Dan Clapson here!
Since 2018, I’ve spent about three months a year living, eating, sipping, snacking, wandering, and occasionally over-ordering my way through Prague. Somewhere between the leafy streets of Vinohrady, a perfectly fried smažák at 1 a.m., and the natural wine bars I now treat like second homes, Czechia carved out a very real place in my heart... and in my appetite too!
Back in Calgary, that love became Prasátko, my Czech-inspired pop-up where Prairie ingredients and Czech comfort collide in the most delicious ways.
Fun fact: Czechia and the Canadian Prairies have shockingly similar growing seasons and pantry vibes. Think dill, root veg, mushrooms, cabbage, and a collective passion for carbs.
I even had a launch party for my cookbook Prairie in Czechia back in fall 2023, so when I say “home away from home” in regards to Prague, I really mean it.
Welcome to Eat North: Czechia—something I hope becomes the start of our broader “Northern Hemisphere” exploration. Think of it as Eat North going on vacation with me to discover everything exciting happening in Prague these days. As one of Europe’s fastest-growing cities, its food-and-drink scene is booming… and severely under-reported in English-language food media.
Here, you’ll find a mix of restaurant guides, neighbourhood eats, coffee haunts worth flying for, food trends, and the cool discoveries you only make when you actually spend time on the ground.
If you’re curious where to eat, where locals actually go, or why Czech cuisine deserves far more global hype, then I think you’ll love this new “expat-ish” off-shoot of Eat North.
Follow along, stay hungry, and if you see me at a vinotéka somewhere in Vinohrady, say ahoj!
