Savoury turkey and stuffing pancakes

Turn turkey and stuffing into pancakes that are good for brunch or dinner

Turkey dinner leftovers are good just reheated, but you can repurpose you to make them so much more interesting. Take leftover turkey and stuffing and use them in this savoury pancake recipe that everyone will love. Add a fried egg on top for a little extra richness.

Turkey dinner pancakes

2 1/2 cups all-purpose flour
2 cups whole milk (3.5%)
2 large eggs
3 tsp baking powder
1 tablespoon cane sugar
2 tbsp canola oil or melted butter
1/2 tsp salt
1/2 cup turkey stuffing
1/3 cup sauteed onions
1 cup cooked turkey meat, finely chopped
canola oil, for frying

Place the first 7 ingredients in a large mixing bowl and whisk until a smooth batter forms. Add a bit more milk if the batter is too thick.

Fold in remaining ingredients and season to taste with salt.

Heat oil in a large pan over medium-high heat and cook pancakes in batches until golden brown on both sides, approximately 1-2 minutes per side.

 

Maple bacon gravy

1 cup prepared gravy
1 tbsp maple syrup
4 strips cooked bacon, roughly chopped

Place all ingredients in a small pot and bring to a boil over medium-high heat.

Reduce heat to medium and cook for at least 5 minutes.

Spoon liberally over top of turkey dinner pancakes.
