This July and August, sip cocktails across Vancouver for a good cause. Starting July 14, together with participating bars and restaurants, you can support the Dr. Peter AIDS Foundation with the inaugural Pride Crawl Fundraiser by ordering signature Pride-themed cocktails. Start with this martini at The Fairmont Waterfront's ARC restaurant.

Senior bartender, Robert Khazarmi uses locally-sourced ingredients from the restaurant's rooftop garden as well as Tempo Renovo Dry Gin, made from wheat grown in British Columbia, on his play on the classic Clover Club cocktail.

1 ½ oz. pear and thyme infused gin
3/4 oz. honey
3/4 oz. freshly-squeezed lemon juice
3/4 oz. egg whites, (from about 1 small egg)
6 raspberries
1 sprig fresh thyme

Add raspberries to glass martini shaker and muddle. Add rest of the ingredients and shake vigorously for 12 seconds. 

Strain into chilled champagne martini glass.

Garnish with fresh thyme sprigs or a raspberry.

Pear and thyme infused gin

6 pears, peeled and diced
1 large handful fresh thyme
1 bottle dry gin

Add pears, thyme and gin to mason jar.

Allow gin to infuse for 48 hours.

Srain and set aside.
