B.C. Blueberry cobb salad

An easy way to include more B.C. blueberries in your meals

Here's a simple way of using fresh B.C. blueberries to your meals. Simply add them to your protein-packed salads and the vinaigrette. Make this cobb salad tonight for a quick and healthy meal. 

Salad

8 cups romaine or iceberg lettuce, torn into pieces
2 cups cooked chicken, chopped
1 cup fresh B.C. blueberries
1/2 cup chopped tomato
1/2 cup chopped avocado
1/2 cup chopped cooked bacon
1/3 cup crumbled blue cheese, like stilton
2 large boiled eggs, sliced

Divide and arrange all ingredients between 2 bowls, then drizzle with vinaigrette. 

Blueberry lemon thyme vinaigrette

1/2 cup B.C. blueberries (fresh or frozen), thaw if using frozen
3 tbsp vegetable oil
2 tbsp fresh lemon juice
1 tsp chopped fresh thyme
1 tsp honey
1/2 tsp salt
1/2 tsp pepper

Add the blueberries, oil, vinegar, lemon juice, thyme, honey, salt and pepper to a blender, and mix on high speed.
