4 hamburger buns
4 eggs
4 hash-brown patties, fully cooked
4 slices American cheese
1 tsp olive oil

Special Sauce

2 tbsp mayonnaise
1 tbsp ketchup
1 tbsp yellow mustard
1 tbsp relish
salt and pepper, to taste

Combine all ingredients.

600 grams ground pork
2 tbsp fresh sage
1 tsp fresh ground pepper
1 tbsp maple syrup
1 tbsp salt
1/2 tsp chili flakes

Combine all ingredients and cover and chill for at least 15 minutes. Using your hands, separate the mixture into four patties, approximately 2-3-inches thick.

Assembly

Preheat your stove-top frying pan to medium heat.

Place olive oil into the pan and let it heat up.

Place sausage patties in the pan and sear on both sides (approximately three minutes per side).

Transfer the patties into the oven and cook all the way through (about another five to seven minutes).

Add cheese on top of the patties for the final minute of cooking to melt.

In a separate frying pan, fry all four eggs (over-easy is best).

Spread the special sauce on both sides of each of the burger buns.

Build your burgers with sausage patty with melted cheese on the bottom, topped with hashbrown and then fried egg.

Close the top and enjoy.
