Bittered Sling Cowtown Fashioned

An Albertan version of the Old Fashioned with Bittered Sling Extracts

Lauren Mote, co-proprietor of Bittered Sling Extracts and Bar Manager at Vancouver's UVA Wine & Cocktail Bar, puts an Albertan signature on this version of the Old Fashioned with Alberta rye whisky.

Cowtown Fashioned

2 oz. Alberta Premium Dark Horse Canadian rye whisky
1/2 oz. mace and nutmeg syrup, see below
2 dashes Bittered Sling Plum & Rootbeer Bitters

Stir all ingredients gently with ice for 10-15 seconds. Strain into an old fashioned glass with a large ice cube, and garnish with a lemon cheek.

Mace and nutmeg syrup

3 cups granulated sugar
3 cups water
2 tsp nutmeg, toasted and crushed
2 tsp mace, toasted

Toast spices in a medium saucepan until you can smell them, about 2 minutes.

Remove from heat and crush them with a mortar and pestle.

Meanwhile, in a saucepan over medium heat, bring the sugar and water to a low simmer. Add the toasted mace and nutmeg, and remove from heat.

Allow to steep for 12 hours at room temperature. Strain the spices out, and bottle in a clean, sanitized container for 7 to 10 days in the refrigerator.
