Blueberry Bacon Chutney

Add a cool twist to your standard burger or cheese plate with this easy to make, salty-sweet chutney.

Enhance your next burger with this unsual, but delicious, savoury-sweet chutney with bacon, B.C. blueberries and maple syrup.

1 cup fresh or frozen B.C. blueberries
1 cup thick sliced bacon, diced
1/2 cup shallots, finely diced
1/2 cup Granny Smith apple, peeled, cored and diced
1/2 cup apple cider vinegar
1/3 cup maple syrup
1 tsp orange zest, finely grated
1/2 tsp ground black pepper
1/4 tsp ground clove

In a medium pan over medium heat, fry bacon until lightly browned, but not crispy.

Strain the bacon and reserve 2 tablespoons of the bacon fat. Using the same skillet, add bacon fat, blueberries, shallot, apple, apple cider vinegar, 
maple syrup, black pepper and clove.

Bring to a boil and continue to simmer over a medium-low heat, for 45-60 minutes, or until 
thick and reduced.

Add the cooked bacon and orange zest, and stir until incorporated.

Serve at room temperature.
