Whether you want a healthy breakfast, dessert, or something to go along with a special occasion brunch, broiled grapefruit always fits the bill. This recipe from The Sobo Cookbook encourages you to experiment with different types of honey. Do keep a close eye on the grapefruits so they don't burn.

4 ruby red grapefruits
1/2 cup honey
1/2 cup shredded sweetened or unsweetened coconut
1/4 cup Grand Marnier

Preheat the oven to 450°F, or to the broil setting if your stove has one. Line a baking sheet with parchment paper. 

Slice the grapefruits in half. Run a knife around the outside of the fruit to separate it from the skin, and then between the sections. This makes for easier eating and creates pockets for the honey and Grand Marnier to slide into. 

Place the halves, cut side up, on the prepared baking sheet. Drizzle the honey overtop, then sprinkle each half with 2 tablespoons coconut and 1 tablespoon Grand Marnier. Broil or bake for 5 minutes, or until the grapefruits are hot and the coconut is golden brown.
