Cafe Medina's Pomme de Moluccas

An apple and rum cocktail that's easy to make at home

There's still a chill in the air in the evening and the warmth and fruity flavours of this apple and rum cocktail will deliver all the comfort you need. Bar Manager Marc Slingsby-Jones’ from Cafe Medina features aged Calvados, honey, fresh apple juice and a house-made spiced rum can easily be replicated at home. 

1 1/2 oz. house spiced rum
1/2 oz. Calvados
1/2 oz. honey
1/2 oz. fresh lemon juice
2 oz. fresh apple juice or cider
cinnamon, for garnish
sugar, for garnish
2 to 3 slices apple, for garnish

Add all ingredients except garnish to cocktail shaker and shake vigorously.

Strain into coupe or glass of choice.

In a small bowl, combine cinnamon and sugar. Dust apple slices in cinnamon sugar and garnish drink with slices.

House spiced rum

1 750-ml bottle Flor de Cana 5 yo rum, or any aged rum
1 stick cinnamon
6 cloves
1/2 pod nutmeg
3 allspice berries
1 bay leaf
1 vanilla bean
1 star anise
1/2 Orange, peel only

Add all ingredients to a pot and bring to boil, simmer for 1 hour. Remove from heat and allow to cool overnight.

Strain to remove spices before use.

Yield:
1 cocktail
