Bar Manager Marc Slingsby-Jones’ from Cafe Medina features aged Calvados, honey, fresh apple juice and a house-made spiced rum can easily be replicated at home.
Add all ingredients except garnish to cocktail shaker and shake vigorously.
Strain into coupe or glass of choice.
In a small bowl, combine cinnamon and sugar. Dust apple slices in cinnamon sugar and garnish drink with slices.
House spiced rum
Add all ingredients to a pot and bring to boil, simmer for 1 hour. Remove from heat and allow to cool overnight.
Strain to remove spices before use.
