Celebrate the arrival of spring with this colourful cocktail from Calgary's Calcutta Cricket Club. This multi-coloured cocktail is inspired by Holi, the festival of colours, but its tropical flavours make it perfect all through spring and summer.
Holi Pyre
3/4 oz. rose syrup
1 1/2 oz. saffron gin
1/2 oz. Beefeater Gin
1/2 oz. lime juice
1 oz. passionfruit puree
1/2 oz. Giffard's Mangalore
3 to 4 oz. club soda
1 to 2 dashes cherry bitters
In a collins glass, build the drink by layering the first 6 ingredients in order.
Top with club soda and a dash of cherry bitters.
