Cardero's cedar plank salmon

A great way to prepare salmon for a hint of smoke

Is there a better smell than a summertime barbecue? Even if you don't have a grill, you can still get into the spirit and enjoy the fragrance with this cedar plank salmon from your oven with this recipe from Cardero's in Vancouver.

For this recipe, you'll need one cedar plank that's big enough to hold both pieces of fish, or two smaller planks.

1 cup soy sauce
3 tbsp brown sugar, plus more for sprinkling
1 lemon, juiced
3 tbsp honey
2 6 oz. salmon fillets
kosher salt
freshly ground black pepper

Fully immerse the cedar planks in water for up to 2 hours.

Add soy sauce, brown sugar, lemon juice and honey into a sauce pan over high heat, bring to a boil and let cool.

Marinate the salmon fillets in the cooled marinade for 30 minutes to 1 hour.

Preheat the oven to 425°F.

Place salmon, skin side down, on the cedar plank.

Sprinkle the salmon with brown sugar, then salt and pepper to taste.

Put the cedar planks in the oven and cook for 15 minutes or until edges are dark and caramelized.
