Donna Mac's Lavender Country cocktail

A little lavender can go a long way. That's why this fresh-tasting creation by the bar team at Calgary's Donna Mac use it sparingly, infusing it into The Botanist gin before combining it with Cointreau, sloe gin and grapefruit for a beautiful-hued drink that goes down easy.

The Lavender Country is being serving from now until Sept. 2, 2019 in support of Skipping Stone Foundation as part of the 2019 Shake, Stir and Strainbow campaign. Seventy restaurants and bars in the Calgary area are taking part in an effort to help raise funds and awareness for the local foundation that provides assistance and empowerment to trans youth and their families in Alberta.

Lavender Country cocktail

1 oz. lavender-infused The Botanist gin
3/4 oz. Haymans sloe gin
1/4 oz. Cointreau
3/4 oz. fresh grapefruit juice
1 sprig fresh lavender, for garnish

Fill a cocktail shaker with ice and add all ingredients, except garnish. Shake vigorously for approximately 15 seconds.

Strain into coupe, garnish with lavender and serve.

Lavender-infused gin

500 mL The Botanist gin
2 sprigs dry lavender

Place The Botanist gin into a clean jar along with dry lavender. Let sit overnight to infuse. Strain and discard lavender and use gin as desired.
