The flowers may not have bloomed yet, but you can get a taste of local Prairie honey in Eau Claire Distillery's new addition to its lineup, the Saskatoon Honey Gin.

Last year, to celebrate the Canadian Prairies, Eat North and Eau Claire Distillery came up with a honey gin for the Prairie Grid dinner series. The response has been so positive that the distillery recently adjusted the recipe and released this new British-style sloe gin, infused with locally-sourced honey, Saskatoon berries, rose hips and Alberta malted barley, in addition to typical gin botanicals.

2 oz. Eau Claire Distillery Saskatoon Honey Gin
1 oz. simple syrup
1 oz. lime juice
2 dashes rose water
1 stalk lemongrass, outer leaves removed

In a cocktail shaker, shake all ingredient, except garnish, together with ice. Strain into a martini glass and garnish with lemongrass.
