Crust

400 g all-purpose flour
100 g Ritz Crackers
200 g cold butter
1 pinch salt
6 tbsp ice cold water, to bring dough together

Preheat oven to 350°F.

Place all ingredients in a stand mixer, and mix with paddle attachment until just combined. Place 2 tablespoons of the dough into muffin tins and press down and around the edges. Bake until golden brown, about 8 mins. Cool completely. 

 

Pie Filling

3 egg yolks
4/5 cup key lime juice
1 can sweetened condensed milk
2/5 cup heavy cream
3 limes, zest only

Preheat oven to 400°F.

Bring a pot of water to boil. Place a metal mixing bowl over the water. In this bowl, whip egg yolk and lime juice until thick (about 2 minutes). Add condensed milk, cream, and zest and mix until combined.

Remove from heat and pour the mixture into your pie shells.

Bake for 10 minutes or until set. Remove from oven and cool completely. 
 

Meringue

300 g egg whites, at room temperature
100 g water
200 g sugar
3 limes, zest only

Place room temperature egg whites in a stand mixer and mix until fluffy. Place water and sugar in a saucepan over high heat and boil until it reaches 115°C (240°F). Pour sugar syrup down the side of mixing bowl slowly and whip until cool. Add lime zest and pipe onto tarts. Brûlée if feeling risky.
