A Caesar with fragrant basil, lime and cilantro

Caesars are just great for a Sunday afternoon cocktail, they pair well with boldly flavoured dishes like the fried chicken at Juke Fried Chicken in Vancouver's Chinatown. There, the Caesar is made with its housemade Juke Caesar mix (a blend of Thai basil, cilantro, pickled chilies, lime juice and maple syrup) with vodka, lemon juice, Clamato and hot sauce. Not to be neglected is the garnish, which includes lime, Thai basil and chicharron. Next time you're having fried chicken, consider making this cocktail to go with it.

1 tbsp celery salt, for the rim
1 oz. Skyy vodka
1 oz. Juke Caesar mix
1/2 oz. lemon juice
2 dashes hot sauce
6 to 8 oz. Clamato
1 wedge lime, for garnish
2 sprigs Thai basil, for garnish
1 piece chicharron, for garnish

Rim a Collins glass with celery salt.

Add vodka, Caesar mix, lemon juice and hot sauce to glass.

Add ice, top with Clamato.

Garnish with a lime, thai basil and a chicharron.

 

Juke Caesar mix

1/4 cup Thai basil
1/4 cup cilantro
1/4 cup pickled chillies
1/4 cup lime juice
1/8 cup maple syrup

Add all ingredients to a blender. Blend until smooth.
