Apple season is here and Ki Modern Japanese + Bar in Toronto is celebrating with this apple-inspired cocktail. Ki uses Ontario-grown Granny Smith apples, which is best in the autumn weather. The bright flavour of apple stands up nicely to the sweetness of the housemade caramel sauce.
Hirosaki’s Finest
4 pieces fresh green apple
			2 dashes Angostura Bitters
			1 pinch salt
			1 bar spoon caramel sauce
			2 oz. Casamigos Blanco Tequila
			2 1/2 oz. apple cider
	In a rocks glass, muddle apple, bitters and salt.
Add caramel, tequila and apple cider to glass, then stir with ice.
Strain into drinking glass with one large ice cube.
