Czech-Inspired PRASÁTKO Pop-Up Returns to Calgary as a Weekly Friday Series

A popular Czech-inspired pop-up is returning to Calgary this winter, this time as a weekly Friday night series. Starting this Friday, January 23, PRASÁTKO will run every Friday from 6 p.m. to 10 p.m. at The Prairie Emporium until the end of February, offering Calgarians a cozy, comfort-forward take on Czech dishes.

Created by Calgary-based food writer and cookbook author Dan Clapson, PRASÁTKO draws its inspiration from both regional ingredients of the Canadian Prairies and traditional Czech cuisine and pub culture, shaped by Clapson’s time spent living in Prague. The weekly format allows the menu to evolve, with weekly feature sandwiches and snacks in addition to its core menu of signature dishes like pickled camembert, goulash, langoš and more.

New dishes joining the menu include a winter squash and broiled Camembert salad finished with a honey-herb vinaigrette. Two beloved Czech soups will also be featured: kulajda, a creamy dill and mushroom soup thickened with potatoes, and česnečka, a classic Czech garlic soup known for its bold flavour and hangover-curing abilities. (Or so we've heard!)

“There's a lot to love about Czech food culture, but one thing that I feel like the country does particularly well is make very delicious soups,” says Clapson. “Given the chilly weather, it feels like the perfect time of year to cook up some Czech-style soups that I know Calgarians will be smitten by.”

In addition to dine-in service, the pop-up will now offer a limited takeout menu, making it easier for guests to enjoy Czech-inspired comfort food at home. Drinks like Pilsner Urquell, Kozel, Becherovka and more will continue to spotlight Czech and Central European creations, alongside plenty of wine, cocktails and Czech-style lemonade offerings too.

For the first time, guests can reserve tables in advance, with online reservations now available.

Running weekly on Friday nights, PRASÁTKO offers a relaxed and inviting way to experience Czech food in Calgary, whether you’re discovering the cuisine for the first time or returning for familiar favourites.
