Julien Salomone, master mixologist and co-owner of East Thirty-Six and Boutique Bar, came up with these cocktails for the Toronto International Film Festival.
This cocktail, featuring lavender syrup, is reminiscent of the south of France. Have a sip when you watch Lolo.
1/2 oz. gin
1/4 oz. lavender syrup
1/2 oz. Crème Yvette
2 oz. cava
1 mint leaf
Pour gin, lavender syrup and Crème Yvette into a cocktail shaker. Shake and double-strain into a Coupe glass. Top with cava, and garnish with mint leaf.
Lavender syrup
3 cups water
3 cups sugar
8 g dried lavender
Combine water and sugar in medium saucepan over medium heat. Stir sugar and water until sugar dissolves. Add lavender. Increase the heat and bring to a boil, then reduce heat to medium and simmer for 3 minutes. Transfer syrup to bowl and chill thoroughly. Cover and keep refrigerated for up to two weeks.
