Milestone birthdays and anniversaries call for an extraordinary celebratory drink. For Fairmont Chateau Whistler's 30th anniversary and the Caesar cocktail's 50th anniversary, the hotel's Mallard Lounge crafted this 5 Decade Caesar. It's full of fresh and fragrant ingredients and the miso paste adds extra savouriness.

1 to 2 tbsp lime juice, for garnish
1 to 2 tsp Caesar spice mix, for garnish
7 gem tomatoes
1 tsp miso paste
1 tsp balsamic reduction
5 basil leaves
1 oz. Finlandia vodka
1 oz. Thai chile and orange gin, recipe below
4 oz. Clamato juice
1/2 oz. Burrowing Owl Coruja
2 to 3 olives, for garnish
1 to 2 pickled green beans, for garnish
1 celery stick


To garnish, dip the rim of a 16oz glass in lime juice and then in Caesar spice mix. Combine tomatoes, miso, balsamic, basil in the glass and muddle together thoroughly. Add vodka, gin, ice and top with Clamato. Use bar spoon to mix and then float coruja on top. Garnish with olive pick, beans and celery stick. 



Thai chile and orange gin

4 Thai chillies
1 Orange, peel only
1 26-oz. bottle gin

Combine chillies and orange peel in a 26-oz. bottle of gin. Allow to sit for 72 hours, shaking periodically or until the taste is spicy and citrus forward.
