This simple surf and turf recipe is a perfect dinner for two

Sometimes, we overthink dinner prep. With meal kits saving time, while using plenty of packaging, we’re also left wondering how to be a sustainability-minded home cook at the same time.

The answer? Go back to basics. A handful of good quality, fresh ingredients including Canadian beef can go a long way in making your dinner delicious while not having an abundance of clean-up afterwards--with leftover recyclable packaging, a pile of pots of pans to wash or otherwise.

This one-pan steak dinner recipe only takes minutes to make and you’ll be amazed at how tasty it is.

Seared striploin steaks with prawns and tomatoes

2 striploin steaks (approximately ½” thick)
2 tbsp unsalted butter
6 large uncooked prawns, shell removed
3 medium-sized tomatoes, halved and roughly chopped
¼ cup water
2 cups mixed greens
¼ cup fresh mint leaves, halved and roughly chopped
¼ cup fresh parsley, roughly chopped
salt (to season)

Season steaks liberally on both sides with salt. Let steaks sit and allow to come to room temperature (about 20 minutes) before searing in pan.

Heat up large pan on high heat. Add steaks, leaving a fair amount of room between them, and let sear on each side for one minute.

Reduce to medium heat, add butter and once melted, spoon over top of steaks occasionally, turning steaks over once again after 2 minutes.

Add prawns to pan and allow to cook for 2 minutes with steaks, turning prawns over once.

Transfer steaks and prawns to cutting board and allow to rest.

Increase heat to medium-high and add tomatoes and water and allow to cook until tomatoes start to break down and the contents of pan thickens slightly, approximately 5 minutes.

Turn off heat, add greens and herbs and stir gently until wilted and mixed evenly with the tomato butter mixture. Keep warm until ready to serve.

Place steaks onto plates, top with tomatoes, greens and prawns and serve.
