Chef Martin Patenaude of President’s Choice® Cooking Schools developed this burger with wagyu beef, Quebec cheese curds, bacon, avocado and arugula.
President’s Choice® Quebec Burger
Preheat the barbecue (preferably charcoal) to medium heat. Brush, clean and oil the grill.
In the meantime, add the mayonnaise and the spiced tomato condiment to a medium bowl and mix. Add pepper and mix well. Set aside.
When the grill is hot, place the wagyu burgers on the grill. Season lightly with pepper.
Cook for about 5 to 8 minutes on one side or until the beef is nicely browned, then flip the patties onto the other side. While the meat is cooking, lightly grill the bacon until they are nicely browned.
When the beef is nicely grilled on both sides, place the cheese curds on the patties and top with bacon slices.
Brush the hamburger buns with olive oil or butter and place on the grill until lightly browned. Remove from heat.
Sprinkle avocado slices with half of the lemon juice.
To assemble, spread spicy tomato mayonnaise on each piece of hamburger bun. Add 1 tbsp of corn relish on the bottom half of each bun. Top with avocado slices and beef patties (with melted cheese and bacon slices). In a separate bowl, mix the arugula with a remaining lemon juice and olive oil. Season lightly with salt and pepper and mix well. Garnish each burger with arugula salad and top with the top half of each bun.
