Royal Dinette's Kaitlyn Stewart came up with this tequila cocktail as a part of Pride Cocktail Crawl, happening now until August 6, to raise funds for Dr. Peter AIDS Foundation. With tequila and pineapple, this drink is sunshine in a glass that can brighten up your day.
1 oz. Don Julio Blanco
1/2 oz. Aperol
1/2 oz. pineapple Gomme syrup
1/2 oz. lime juice
1 sprig rosemary
2 dashes Peychaud's bitters
6 to 8 oz. pineapple juice
Combine all the ingredients, except pineapple juice, into a shaker tin. Shake vigorously for 7 to10 seconds.
Fine strain over crushed ice into a rocks glass. Top with pineapple juice.
