Here's a light summer sipper for you: The Salted Vine's Mixed Emotion raspberry gin cocktail, created by bar manager Dave Warren, formerly of Araxi in Whistler, B.C.
Araxi is known for its expert use of local ingredients, its adherence to seasonality, skillful techniques, and for providing an overall outstanding dining experience. Now, Warren has taken the same thoughtful approach to drinks to The Salted Vine in Squamish.
1 ½ oz. Gillespie's raspberry gin
1/2 oz. Amaro Montenegro
3/4 oz. orange peppercorn shrub
1 oz. raspberry purée
3 whole raspberries, for garnish
1 sprig mint, for garnish
Add all ingredients except garnish to mixing glass and add ice.
Shake and double strain into coupe.
Garnish with a raspberry skewer and mint spring.
