Torafuku's Kyoto Moonlight

To celebrate Torafuku's third birthday, the Vancouver modern-Asian restaurant is featuring $3 cocktails during their "Happy Birthday Hour" for three days only, from July 24 to July 26. Among the drinks is this Kyoto Moonlight cocktail that Steve Kuan created. Give it a try at home!

1 1/2 oz. Moonlight Japanese Shochu infused with roasted rice tea (genmai)
1/2 oz. Grand Marnier
3/4 oz. fresh orange juice
1/2 oz. fresh lime juice
1/2 oz. Japanese Sencha tea syrup

Combine all measured ingredients in a cocktail shaker.

Add ice, shake, strain into a coupe glass and enjoy. 
 

Genmai-infused Moonlight Shochu

2 cups Moonlight Shochu
5 tsp genmai roasted rice tea

In a pot over medium heat, bring a pot of water to 58C.

In a glass jar, steep roasted rice tea leaves in Moonlight Shochu, cover, and place in the pot of water for 30 minutes.

Strain and wait until cool.

Japanese sencha tea syrup

3/4 cup water
1 cup sugar
5 tsp sencha tea

Combine water and sugar in a pot and bring to a boil over high heat. Once water and sugar mixture comes to a boil, remove from heat, and add tea leaves and steep for 10 minutes. Strain and wait until cool.
