At Vancouver's Tuc Craft Kitchen, its bartenders use rye made by 45th Parallel Distillery. If you can't find this where you are, feel free to use any Canadian rye as a substitute for this warming classic cocktail.
Add a pinch of sugar to a tall glass and add just enough water to dissolve.
Add a dash of bitters, rye and ice to the glass and stir to mix.
Strain into a short Old Fashioned glass.
Garnish with an orange peel.
