The Turkey "big mac" burger

A "big mac" burger, but with turkey!

Homemade burger season is officially upon and that is exciting news!

This fun recipe draws inspiration from an iconic fast-food burger, but makes things a little bit more lean thanks to ground turkey meat. If you're going to fire up the barbecue for this recipe, cook the turkey patties on a grill tray for best results.

 The burger sauce mentioned in this recipe is one heck of a condiment and very easy to make. Feel free to keep it in your back pocket–not literally–and use it on other summery things like grilled hot dogs and sausages.

Turkey patties

1 pound ground turkey
1 tsp salt
1/2 tsp black pepper
3 tbsp olive oil

In a big bowl, thoroughly mix ground turkey with salt and pepper. Shape into four even round patties, and flatten between sheets of parchment paper until 1 cm in thickness.

Heat the olive oil in a med-hot cast iron skillet.

Working one at a time, sear the burgers in the pan, cooking 3 minutes per side. Transfer to a pan in the oven to keep warm while you cook the remaining three.

Burger sauce

1/4 cup French dressing
1/4 cup mayo
3 tbsp minced pickle
1 tbsp pickle brine

While patties are cooking, mix the french dressing, mayo, minced pickle, and pickle brine in a bowl.

Assembly

6 sesame buns, halved
2 slices American cheese
8 thin pickle slices
8 lettuce leaves
1/2 cup onion, minced

To assemble: this will require four bottoms of the sesame buns and two tops.

Layer a sesame bottom with 2 tbsp of the dressing, 2 tbsp minced onion, two lettuce leaves, and one slice of cheese. Layer the hot turkey patty on top.

Top this with another sesame bun bottom, again topping with the same amount of dressing, onion, and lettuce.

Top with another turkey patty, and cover with four pickle slices. Finish with a sesame bun top.

Repeat for the second burger. Enjoy!
