If you've been to Torafuku in Vancouver, you know all about the acclaimed modern Asian cuisine it serves. But, if you haven't tried the cocktails, then you need to go back and taste Max Borrowman's creations. This drink is Inspired by Japanese culture, with sake and green tea. Try making it at home, too.
1-1/2 oz. house sake
1-1/2 oz. Junmai ginjo
1 dash smoked pear bitters
1/4 oz. green tea syrup
1/4 lime
1 oz. pear nectar
2 sprigs thyme
1 splash absinthe
Pour all liquid ingredients except absinthe into a cocktail shaker.
Shake and strain into a absinthe-rinsed coupe glass.
Garnish with thyme and a lemon twist.
