You don't have to be a big whisky fan to enjoy an Old Fashioned. Shaun Hicks of Edmonton's Wishbone came up with this gin cocktail to capture the complexity of an Old Fashioned while making it more refreshing for the summer.
1 3/4 oz. Bols Genever
1/4 oz. Ransom Old Tom Gin
5 dashes Angostura Bitters
5 dashes orange bitters
1/4 oz. demerara oaked simple syrup
1 strip orange peel
Add all ingredients except orange peel to a cocktail shaker with ice. Stir and strain into cold rocks glass with ice. Twish orange peel to release its oils, and garnish.
To create oak syrup, add two parts demerara to one part water and simmer. Add 2 tablespoons of oak chips to the hot water and steep overnight. Then strained onto bottle or jar.
