Replace bread crumbs with Rice Krispies to make burger patties gluten free.
2 cup Beluga lentils
1 cup cooked sweet potatoes, mashed
2 cups Rice Krispies, crushed, plus more for coating the burgers
1/2 tsp curry powder
salt and pepper, to taste
Combine the lentils, mashed sweet potato, 1½ cups of Rice Krispies and curry powder. Mix and season with salt and pepper to taste. If the burger mixture is still too moist to form into patties, add the additional ½ cup of Rice Krispies.
Form the mixture into patties, about ½ cup per each. Coat both sides with additional Rice Krispies for extra crunch.
Cook in a non-stick pan over medium heat for 4-5 minutes per side.
Serve on burger buns with mayo, lettuce, avocado or the toppings of your choice. If you want to keep them gluten-free, use gluten-free buns or lettuce wraps instead.
